Awajiya, a bento box lunch shop based in Higashinada-ku, Kobe City, will sell “Kobe Dawn Shirasu Don” at its limited stores from June 1 to 30.
Hyogo Prefecture boasts the largest catch of shirasu in Japan. However, because it is not well known, young fishermen of the Kobe City Fisheries Cooperative decided to “raise the value of Kobe shirasu even more! and decided to “raise the value of Kobe-grown shirasu even more! Awajiya and the fishermen’s cooperative jointly developed this product, which was first released last year, and will be released again this year.
Only fishermen in Kobe are allowed to catch shirasu before “dawn. Since the “dawn shirasu” is caught before breakfast, its flesh is clear and white even after boiling, making it a rare species of shirasu. The freshly caught shirasu is sent directly to the processing plant near the fishing port owned by the same fishing cooperative, ensuring its freshness.

The package of the “Kobe Dawn Shirasu-don” features a design of a scene of shirasu fishing around dawn. The rice is covered with a generous amount of “Dawn Shirasu” and served with sesame seeds, nori (seaweed), and simmered vegetables.
To preserve the freshness of the shirasu, the dish is sold at only eight restaurants in the prefecture.
