On June 21, Hakutsuru Shuzo (Higashinada-ku, Kobe) released a summer-only draft sake from its Mikagego series, a brand limited to directly-managed stores.
Two types of sake were released: “Junmai Daiginjo Nama-zake,” made only with rice polished to 50% and rice malt, and “Daiginjo Nama-zake,” to which brewing alcohol was added.
Both types of sake do not undergo any heat treatment called “hi-ire” during the process from pressing to bottling, and are characterized by their fruity aroma and freshly squeezed flavor.
Mikagego” is a series of sake brewed with great care by concentrating the benefits of rice, water, people, and nature, which are the starting point of sake brewing, in the Mikage area. The Mikagego brewery used to be located by the sea, so this summer’s labels feature a “brewery seen from the sea” and a “sea seen from the brewery” design, respectively.
The cool bottle and label make a perfect summer gift. Each bottle is limited to 600 bottles and is available at Hakutsuru Sake Brewery Museum, Hakutsuru Mikage MUSE, and Hakutsuru’s official online store.
