Rice-flour sweets “Tadadado” with seasonal “Kobe figs

TADADADO” (Higashinada-ku, Kobe), which offers new ways to enjoy rice through rice-flour sweets, noodles, and amazake gelato, will sell a seasonal product, “Rice Tart Kobe Fig,” in its stores and online store, scheduled to be available from mid-October.

The tart dough utilizes non-standard organic Yamada-Nishiki from Hyogo Prefecture made into rice flour, and the product is “delicious without barriers,” free of milk, eggs, wheat, and white sugar, making it a perfect gift for any recipient.

The “Kobe figs” used in the tart are ripened on the tree and are popular for their mellow aroma and rich sweetness. Because they are not suitable for long-distance transportation, they used to be available only in the suburbs of Kobe City. The company has partnered with partner farms to make effective use of fruit that would otherwise be out of standard for fresh consumption.

In the company’s own kitchens, the fruits are picked in the morning, sprinkled with sugar, drained for about seven hours, and then slowly semi-dried in a low-temperature oven before being baked into tarts.

The rich sweetness and soft texture of figs go perfectly with the crisp tart dough, Earl Grey flavored filling, and Grand Marnier-scented fig jam. The Earl Grey is certified organic in New Zealand.
