Yonetani Shoten (Nada-ku, Kobe), which specializes in sake lees from Nada’s famous sake Hakutsuru, will release “Fermentation Power Sake Lees Bed MINI” on April 11. It will be available at Hakutsuru Sake Brewery Museum and Hakutsuru Mikage MUSE in Higashinada-ku, Kobe City, as well as at Coop Kobe (some stores).

The fourth product in the company’s “Sakekasu Tradition Project” to pass on traditional Japanese fermented food culture to future generations is a product that makes it easy to make “kasuzuke” (pickles with sake lees) at home.
Sakekasu is often associated with wintertime consumption such as sake lees soup and amazake (sweet sake), but it is widely known for its health and beauty benefits.
Pork loin marinated in sakekasu
Sake lees is used to make “kasuzuke” (pickles with sake lees), and as typified by “narazuke,” the ingredients are mainly vegetables, and to make kasuzuke at home requires advance preparation such as pickling the ingredients in salt and drying them in the shade. Also, it tends to be avoided because it takes weeks for the sake to become deliciously pickled.

In the new product, however, pork loin or fish fillets are simply placed in a zipper-top bag containing sake lees along with salt and mirin, and it is ready in just one day. The taste is stable and delicious.
The restaurant’s official Instagram also introduces recommended easy recipes. You can enjoy making kasuzuke (pickles with sake lees) at home easily.

When President Yonetani’s daughter went to a barbecue, she gave her a plastic container of “pork loin marinated in sakekasu,” which was a big hit with her friends. She was convinced that sakekasu would be popular among young university students! and that is how they came to commercialize this product. I would like to marinate various kinds of pork loin in sakekasu to make it taste like the famous “Uokyu” restaurant.
