On September 5, the microbrewery “HAKUTSURU SAKE CRAFT” opened at the Hakutsuru Sake Brewery Museum in Higashinada-ku, Kobe.
The new facility was designed to make sake brewing more accessible and to contribute to the growing popularity of sake. 37㎡ in size, the facility is compact, but allows one-stop operation from rice washing, soaking, steaming, koji making, brewing, pressing, bottling, and heat sterilization (heat sterilization).
Visitors can see the brewing equipment and the fermenting unrefined sake through the glass, and depending on their schedule, they can also observe the sake brewing process.
The facility will start out by producing high-class sake, but in the future they plan to produce original sake using special brewing methods and yeasts that have never been used before from among more than 470 types of proprietary yeasts, as well as SAKE, a brewed sake using hops, ginger, and other ingredients.
In the future, there are also plans to accept orders for “made-to-order SAKE” and collaborate with other industries. The person in charge says, “We are excited about the new challenge of brewing in a microbrewery. We hope that visitors will be able to see the sake brewing process up close and rediscover the goodness of sake.

I had an image that sake requires a fairly large space for production, including large vats and a place to manage the rice. The image of sake is about to change drastically!
